The Santoku is a general purpose Japanese style Cooks knife with a straight edge which allows for very fine slicing that is typical of Asian cuisine, though it is equally suited to Western cuisine. The Soho Knives Black Santoku has a Granton Edge, which creates air pockets to stop soft foods and fine slices sticking and also a deeper, and more rigid blade than other Santoku’s making it more durable.
The blade length is 18cm (7”).
