The Santoku is a general purpose Japanese style Cooks knife. The straight edge and taper ground blade allows for very fine slicing which is typical of Asian cuisine, though it is equally suited to Western cuisine also. The Classic Ikon Santoku has a Granton Edge, this creates air pockets to stop soft foods and fine slices sticking. The hollow-edge blade length is 14cm (5.5”).
