A preparation knife designed with a tapered, pointed blade for working around joints. It is specifically for removing bones from raw poultry and other meats as well as trimming fat and sinews. The Sabatier boning knife is rigid. The blade length is 13cm (5”).
The Sabatier Perrier range is made in the traditional way with the blade bolster and tang in one piece, with rivetted ABS and glass fibre handles, giving additional strength.
